Flavor-Packed WFPB BBQ Sliders

What you'll need

  • 1 15oz can chickpeas, drained and rinsed
  • 1 cup cooked quinoa
  • ½ cup whole wheat bread crumbs
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 ¾ tsp sea salt
  • 1 tsp chili powder
  • 1 tbsp raw sugar
  • 2 tbsp oil-free barbecue sauce

How you'll do it

  • If your quinoa isn't cooked, you'll need to do that first. I use the Instant Pot for this and it comes out perfect every time! Once that's done...
  • Preheat oven to 350°.
  • Pour chickpeas into a large bowl and mash with a fork or potato masher until broken down with small chunks still remaining.
  • Add the quinoa, bread crumbs, garlic powder, smoked paprika, cumin, salt, chili powder, sugar, and BBQ sauce.
  • Stir to combine well. Add more bread crumbs if the mixture is too wet, or add more BBQ sauce if it's too dry. Taste and adjust seasonings if needed.
  • Mold mixture into slider-sized burgers (or full-sized burgers if you're not fun) and place onto lined baking sheet. I usually just gauge the size based on how big the slider buns are, since they can vary.
  • Slide those in the oven (see what I did there?) and bake for 15 minutes. Flip burgers and then bake for 15 more minutes. You may need to bake a bit longer if you made these full burger sized.
  • Serve dressed with more BBQ sauce, red onion, lettuce, tomato, or whatever you like!
