I know, I know… it’s summertime grilling season, and options for vegan, vegetarian, or plant-based meals always feel limited. Seriously, how many veggie burgers can we eat?!? Well here’s a cool twist on grilled veggies, and the great part about it is you can get the kids involved in choosing what they eat for dinner — grilled vegetables in foil packets, customized for each person!

Just grab some foil, cut up your favorite grilling veggies, and create these easily customized grill packets. No more picking out the vegetables your kids refuse to eat or fighting over food left on their plates. Everyone chooses which veggies they want and adds what spice blend they want, and everyone is happy. The kids take ownership and feel in control of what they’re having for dinner, and in the end — they’re still eating veggies, so everyone wins. And it’s really fun!

My favorite vegetables to add to my grill packets are:

  • Corn on the cob (cut into thirds)
  • Potato wedges
  • Peppers
  • Grape tomatoes
  • Zucchini
  • Baby bella mushrooms (whole)

Kid-Friendly Grilled Vegetables in Foil Packets

What you’ll need

  • low fat or fat-free cooking spray
  • grilled vegetable seasoning
  • heavy duty aluminum foil

Recommended Veggies:

  • orabe or red bell peppers
  • plum tomatoes
  • asparagus
  • potatoes
  • corn on the cob
  • red onion
  • zucchini
  • yellow squash
  • mushrooms

How you’ll do it

  • Cut 2 large foil pieces (about 12×18 or so) for each serving you're making. Let's assume 4 servings, so cut 8 foil sheets.
  • Lay out four of the sheets on your counter or table. Spray a light coating of cooking spray on each sheet.
  • Here's the fun part: Let all your family members choose which vegetables they want in their personalized packet, especially the kids. I've found that if they're the ones picking the veggies, they're more likely to actually eat them!
  • Add the chosen veggies to each foil sheet and then sprinkle with a healthy portion of your chosen vegetable grill seasoning. If you're looking for a recommendation, check this out. Everyone seemed to like it!
  • Spray the underside of the other 4 foil sheets and place them on top of each packet, cooking spray side down. Fold up all of the edges nice and tight.
  • With a permanent marker, write each person's name or inital on each packet so they're fun and personalized!
  • Place each packet on the grill on medium heat and cook for about 20 minutes, turning a few times to ensure even cooking.
  • Remove from grill, open packets (be careful of hot steam!), and scoop veggies onto plates to serve. Add more seasoning if desired. Enjoy!
