This dish is great as a breakfast, but we love it so much that we plan it for dinner even more often! A healthy and much lower fat/calorie alternative to Eggs Benedict. When the kids ask me what’s for dinner and I respond with “Eggless Benny,” it’s always greeted with a “Yay!”

What you’ll need
- 1 package whole wheat English muffins
- 2 avocados, halved and sliced
- 3 tomatoes, sliced
- 1 batch Non-Dairy Hollandaise Sauce
- paprika
- fresh parsley
How you’ll do it
- This one is so complicated. Ready? Here goes… Toast English muffins.
- On top of each English muffin half, layer a tomato, then avocado slices, then a generous helping of hollandaise sauce.
- Finish off with a sprinkling of paprika and fresh parsley and serve.
- Take a rest. That was exhausting!
