A.L.T. Sandwiches (Avocado, Lettuce & Tomato)

Looking for a quick lunch or dinner that’s both healthy and delicious? Try my version of a B.L.T. — The A.L.T.!

This one is easy, especially if you already have some Oil-free Vegan Mayonnaise on hand. And if you’re a fan of tempeh bacon or similar substitute, feel free to add that in as well. I think it’s perfect without, though.

What you’ll need

  • 8 slices whole wheat sandwich bread, toasted
  • 2 avocados, sliced
  • 2 tomatoes, sliced
  • ¼ cup Oil-free Vegan Mayonnaise
  • 4 lettuce leaves

How you’ll do it

  • I don’t think I really need to spell this out, but here goes. Spread mayo on two slices of toasted bread. Assemble each sandwich with one lettuce leaf, tomato slices, and avocado.
